Ingredients

  • 2 1/4 cups whole wheat flour
  • /4 cup non-fat dry milk solids
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 3 teaspoons cinnamon
  • 3/4 cup wheat germ
  • 1 cup honey
  • 1/2 cup coconut oil
  • 4 eggs
  • 1 teaspoon grated orange rind
  • 1 teaspoon vanilla
  • 6 small sweet apples, pared, cored & thinly sliced

 

Cooking Time

  1. Preheat the oven to 350 degrees.
  2. Sift the flour, milk solids, baking powder, salt, and cinnamon together.
  3. Combine the wheat germ, honey, coconut oil, eggs, rind, and vanilla. Stir this into the dry ingredients. 
  4. Place 1/3 of the batter in a 3-quart baking dish. Spread half of the apples over this batter.
  5. Place another third of the batter on top of the spread apples, spread another layer of the remaining apples and then the last third of the batter.
  6. Bake for 45 minutes.
